5 Healthy, Warm Salads to Enjoy All Winter

Some of the most common New Year’s Resolutions are to eat better, lose weight, focus on health, and improve a junk food-rich diet. What better way to achieve those goals then to jump on the salad train? Unfortunately, chilly temps, unexpected blizzards, and dark days are more suited to cheesy casseroles and pastas than cold dishes filled with raw veggies. Salads may be super-healthy, but they’re hardly comfort food—until now. It’s time to meet the warm salad. These healthy dishes often feature sauteed, roasted, or steamed veggies, hearty whole grains, and plenty of complex flavor. Serve them with soup for an extra-toasty lunch or dinner. We tracked down five filling salads that will keep you healthy, full, and warm all winter long.

Warm Kale Salad

1. Warm Kale Salad with Dried Cranberries and Walnuts

This dish may look like a bit of an ugly duckling, but it more than makes up for it in flavor. Blanch ribbons of kale, then mix them with sauteed shallots, cranberries, walnuts, and garlic.

2. Superfood Salad with Black Rice, Butternut Squash, Sweet Potatoes, Cranberries, Goji Berries, Sunflower and Pumpkin Seeds

The name really says it all for this one-bowl wonder. This recipe requires a bit of work (making rice, roasting sweet potatoes and butternut squash), but after all the ingredients are prepped it comes together pretty quickly. Plus, it’s loaded with flavors from sweet to savory to salty to rich. Yum!
